It's a great go to recipe.

I always love to participate in sharing recipes. Kelly, from Kelly's Korner is asking for great go to recipes. It quick. easy and real good. She has postponed her post until next week so I will share another recepie next week.

The story on how I came up with this recipe.

One big NO! NO! We have all heard time and time again. Never go grocery shopping when you are hungry. Well I totally ignored that rule. I was so hungry and I wanted Mexican. As I was shopping I started pulling everything I liked off the shelf and thought, this could get ugly, complicated and messy. I like my one pot meals and I try to keep it down to 10 ingredients per meal. Then I had a thought, "more like a revelation" layering everything in a pie plate. I wasn't sure how this was going to come out but I was hungry and all these ingredients sounded so good. When I got home I immediately started working on this. It took about 50 minutes to make. It came out so good, so rich in flavor. My husband loved this so much, he said, I have to put this in my Family Heritage Cookbook section so I can remember to make it again. But I have to post it in my D.I.E.T.? 15 minute meal section because it is only 9 points per serving. Now that is good Mexican.

Ingredients:

1 1/2 pounds Chicken breast, skinless, boneless, raw,
2 cups Vidalia onion,
3 large Mission whole wheat tortillas
1 oz Old El Paso Taco Seasoning Mix
5 oz Old El Paso Mild Enchilada Sauce
1 1/2 cups salsa
1 1/2 cups Old El Paso Fat-Free Refried Beans
8 tbsp reduced-fat sour cream
1 cup diced tomatoes
3 tbsp olive oil
3 cups shredded Sargento 4 cheese Mexican

Instructions:

Chop and sautéed onions in olive oil. Clean and chop chicken into one inch chunks. Add chicken to the sautéed onions. Braise chicken. After chicken is braised add 2 cups of water and simmer on medium for 20 minutes with a lid on the pot. Chicken should fall apart at this time. If not, continue to cook in some liquid for and additional ten minutes. Continue cooking until all the liquid is gone. Add the packet of taco seasoning mix and set aside.

Put the refried beans in a bowl and add 1 cup of salsa. Mix and set aside.

Take a Pyrex pie dish and put one tortilla shell on the bottom. Cut tortilla shell to size. Layer the refried beans on the tortilla shell then add 1 cup of cheese. Cut another tortilla shell and place on top of the cheese. Top that tortilla shell with the chicken. Add the enchilada sauce and salsa on top of the chicken and 1 cup of cheese on top of the salsa. Last layer! Cut the tortilla shell to size and place on top. Put remaining onions and cheese on top of the shell. Bake on 350 degrees for 30 minutes. Cut pie into 8th. Let pie cool for 15 minutes before serving and top with 1 table spoon of sour cream, salsa and fresh diced tomatoes.

School days...School days... reading, writing and WOW!!!!

Thank you everyone who participated in "What would your children say?" Wednesday. I know you all are very busy with school and homework. Thanks for taking the time to post. I know I have talked about this before, but I just find it amazing the amount of knowledge these children have to have at the age of six and seven. I’m glad my little one can handle it right now. You noticed I said, right now. When he is in 7th grade they might want him to learn trigonometry. Now we're in trouble!! This moma don’t know trig. If this mama don’t know trig, this mama can’t help.

Monday's homework: Every week the teacher adds five words to the list until they have a total of twenty spelling words. Once they have a total of twenty words they will continue to add five words each week, but the first five will drop off, always leaving them with a total of twenty words. Every week he has to write all the spelling and high frequency words three times. He must also practice the six short a sound words.
Tuesday's homework: He must complete front and back of one of this math sheet.
Every morning when the children arrive to school they must get their morning work sheets and complete them. My guy is not finishing his morning work so the teacher is sending it home to be completed. We have open house on Tuesday. I can’t wait to see what the teacher has to say!!!!!

Wednesday's homework: He must complete a writing worksheet. This is a process for us. He will say his sentence and write it down. If he thinks there is a word he is not spelling correctly, he will ask for my help. I will help him sound it out and spell it correctly. This paper is prior to us going back over it fully.
Thursday's homework is to go over all the spelling, high frequency and phonics words. Every Friday there is a math and spelling test.

Some funny saying the Cisco Kid comes up with.

It’s that time of week again. On Wednesday's it's “What would your children say?” Children are quick on their feet with all the funny, shocking, outlandish things they come up with. I enjoy documenting these events. Join and share with us your children’s moments that send you into shock. No matter how big or small your children are they will come up with something that will leave you speechless.

Oh….how they can make you feel so bad!!!!

The Cisco Kid was getting reprimanded for something he was doing and out of his mouth comes…..I was trying to do a good deed and it turned into a nightmare. He left me speechless!!!!

My little cutie pie hurt himself, so I did what any mother would do. I held him and rocked him while the whole time I’m saying…..It’s OK, you’ll be all right, you’re not bleeding, tell me what I could do for you, is there anything I could do to make you feel better? He sniffled and said nooooo. Then, I made the mistake of saying. I’ll do anything to make you feel better. He immediately stoped his tears, snapped up his head, grinned and said. ANYTHING!!!! Again speechless!!!!!

Almond cups

Every Monday I am going to post a recipe from my Christmas cookie collection. There are a total of twelve recipes I will be sharing.

I have already posted about my Almond Crescents and no cook S'moors. This week is Almond cups.
Almond filled cups topped with a cherry. This is the third week and third recipe from my Christmas cookie collection. There are nine weeks left and you will see my entire collection that I bake every year and give out to my Family and Friends.

2 Dozen Metal Cups,
One Pillsbury Pie Crust (pre-made) 2 rolls in a box.
1 can of Solo Almond Cake & pastry filling
1 egg.
1 container of dried cherries

Combine 1 can of Almond Filling with one egg. Set aside. Roll out pie shells and cut 2 inch circles. Get as many circles as possible out of your pie crust. Once you have all your circles cut, gently press the curst into metal cups and remove excess from rim. Fill cups 3/4 of the way with the Almond Filling. Put cups on a baking tray and bake at 350 for 12 to 14 minutes. Let cool and remove from metal cups and top with 1/2 of cherry.
