Neapolitan Cookies

This is the Eighth of twelve posts from my Family Heritage Christmas cookie recipes. Every Monday from now until December, I will share my full collection of Christmas cookie recipes with you. This is a sneak peak at the next four.

My Christmas cookie collection consists of twelve different kinds of cookies. Every year I bake over 500 cookies and give them to our family and friends.

I have already posted about my Almond Crescents, no cook S’mores, Almond cups , Coconut Macaroons, Crisp sugar cookies, Chocolate Dipped Lady Fingers, and Oat Rageous Chocolate Chip Peanut butter.


1 cup butter
1-1/2 cups sugar
1 egg
1 tea. Vanilla extract
2-1/2 cups all-purpose flour
1-1/2 tea. baking powder
1/2 tea. salt
1/2 tea. Almond extract
1/2 cup sliced almonds
red food coloring
1 square unsweetened baking chocolate, melted
2 tablespoons of poweder coco
1 tablespoon of strawberry extract.

Line a 9 in x 5 in 3 in. high loaf pan with waxed paper. Set aside. Cream butter and sugar. Beat in egg and vanilla. Combine flour, baking powder and salt. Gradually add to the creamed mixture. Divide dough into thirds. Add strawberry extract and red food coloring to one portion, Spread evenly into prepared pan. Add almonds and almond extract to second portion, spread evenly over first layer. Add melted chocolate and coco to the third portion. spread over second layer. Cover with waxed paper, Refrigerate overnight. Unwrap and cut loaf in half length-wise. Cut each portion into 1/8 inch slices. Place 1 inch apart on ungreased baking sheet. Bake at 350 degrees for 10 to 12 minutes or until edges are firm. Remove to wire rack. Makes 4 dozen.

The word is out!!!

It has been a week full of Birthday celebrations and fun. My Birthday was yesterday and the celebrations started on Tuesday. My dear friend Kimberly took me out to lunch at Stonewood Grill and she surprised me with the Filled Pancake Pan and Ebelskievers cookbook from William Sonoma. I can’t wait to try this out.

Another one of my dear friends Rebecca invited me out to a birthday breakfast on Wednesday.

Friday my in-laws come into town and we all went out to dinner at J Alexanders Restaurant. The food was fabulous and so was the margarita. We had done a triple birthday celebration there. Chiefs birthday is the 14th, my Mother-in-law’s birthday is on the 24th and of course my birthday on the 10th.

Saturday, the Chief and I had a date night. Grandma and Grandpa were so nice to watch the Cisco Kid for us. We went to a movie and saw, My one and only. After the movie the Chief brought me to the Town Center. He said...he wanted to buy me a purse from Brighton or Coach for my birthday, but he had no clue what I wanted. He thought it would be a good idea if he went shopping with me and let me pick out whatever I wanted. Now, that was the best thing he could have ever said to me. It took allot for the Chief to go shopping with me. He hates to go shopping, especially with me. I totally drive him crazy. I have to look at everything and I don't want to miss a thing. Shopping with me usually lasts for hours. It was a thousand times better when he came with me, than him just getting me a gift card. It took me about one and a half hours to pick out the purse and the wallet I wanted. The Chief was very patient. I found one that I absolutely love at Brighton. The Minx Bow Tote and Chateau wallet. LOVE THEM!!!

Grandma and Grandpa know how I love to collect Christmas Train Ornaments. The Cisco kid is making a heart out of his hands. Hallmark Lionel Train Ornaments and a Train Puzzle. LOVE THEM!!!!
My poor husband has been taking all the pictures and he isn't in any of them.

Roasted Potatoes

Roasted Red and Sweet Potatoes with Caramelized Onions
Roasted potatoes come out so sweet and delicious. It makes a perfect side dish with any meal.

3 large sweet potatoes
6 med red potatoes
1 Vidalia onion
1/2 cup parsley
1/4 cup olive oil
Salt and pepper to taste

Cut potatoes into 2 inch squares. Cut onion into slices. Toss all ingredients together. Place on a lined cookie sheet and bake for one hour at 350 degrees.


My family likes them best with Meatloaf.

When the boys are happy the Den Mom is happy

Last week I posted about the Cub Scout Doodle. They really enjoyed painting and putting it together. This Doodle is a good way to teach the boys how to be organized and for them to keep track of all the badges and belt loops they will receive. I made some mock badges and as we complete a requirement the boys will get the mock badge. They will place the mock badge on their name tag until they actually receive the real thing at the Pack Meeting. I displayed all the mock badges on the Doodle pole. Last Thursday we completed the Art Belt Loop requirement and all the boys received a mock painter’s pallet to put on their name tag. You would have thought it was Christmas they were so happy. The boys loved it so much, they all wanted to know what they were going to work on next and what mock badge they were going to get.

Just one more!!!!

Children will always give you the unexpected. These adolescent years are really something we never want to forget. Children, what they say and do are profound, hilarious, shocking and downright cute. It's another Wednesday of "What would your children say?"

HOW DO YOU KNOW YOU ARE TAKING TO MANY PICTURES OF YOUR CHILDREN.

I have been taking so many pictures of The Cisco Kid. One afternoon we were outside, I was doing some gardening and The Cisco Kid was playing. We got very hot and I decided we needed to go inside. I asked the Cisco kid if he would like one of my delicious frozen fruit slushies to cool him down. He immediately said YES!!! Then, he immediately said NO!!! I then told him I was going to make one for myself. He then asked, Mom are you going to take pictures? I answered, no baby. He then asked, Do you promise? I replied, I promise. He then said, OK!! I’ll have one then.

Yup!!!! To many pictures. He was ready to give up that sluchy he loves so much.

Halloween Costume

For the past two years The Cisco Kid has been a fireman for Halloween. This year he is going to do something totally different. He likes to pretend he is a scientist and he makes his science projects with different kinds of liquid. He also likes to look at bugs under his microscope. Since he already thinks he is a Scientist. I think it is fitting for him to be a Mad Scientist for Halloween.

Last week I posted all the pieces of the costume. This is the ending result of what we came up with. I had to make the Steampuck Goggles.
