Chicken Waldorf Salad on a Croissant


A great winter or summer sandwich. This sandwich is a good change from a winter long soup and sandwich meals. This Chicken Waldorf Salad is so perfect alone or served on top of a nice buttery croissant. 

 
2 cups of baked and diced chicken. Approximately two breasts
1 large red apple diced in small bite size pieces
1/2 cup of diced carrots
1/2 cup of chopped walnuts
1 tablespoon of brown sugar Splenda
1/2 cup of Hellman mayonaise
Salt and pepper to taste
Add all the above ingredients into al large bowl and mix well.
lettice
1 tomato sliced
2 large croissants
Cut the Croissant in half and pile the Chicken Waldorf Salad on top. Garnish with lettice and tomato.

We are so excited, We're off to District

Who knew the Pinewood Derby would be so much fun. The Cisco Kid's Pinewood Derby Fire Truck Vehicle came in 2nd place. He won four out of six races with his highest speed of 179.3 mph. How the cars compete. All the Tiger Cub's race against each other until there are only the top three left. The top three winners compete against the next ranked scout. In this case the Tiger Cub competes against the Cub Scouts. The Cisco Kid won one of those races. That was not enough to qualify him to race against the next highest rank scout (Bears). In order for the boys to race against the next ranked scout, they have to win. The Cisco Kid is still very excited he made it to District. The top three winners in each rank go to District and compete against other Packs in our area.
After putting on all the extra wood to the truck we still come under the 5 oz mark.  We added one more ounce in weights.  
This is where they inspect the Truck to make sure it has the right tires and axel.
This is where they weigh all the vehicles. The Cisco Kid's truck weighed 4.6 oz. When we race in the Regional’s we can add more weights as long as it doesn't go over 5oz.
The truck has to fit inside this box.  They want to make sure it is not too big for the track.
Very cool track.
The Cisco Kid won the first race of the day.  179 mph.  The fastest car went 187.6 mph.

All the winners in each scout rank.
Nicolas's car 4 with the shark fin won 1st place. The Cisco Kid won 2nd place and Danny won 3rd place.

Ditalini pasta and eggs



Dinner on a budget! As a child, this is one of those family meals we had all the time. This is also one of the Chief's favorites. A large pot that feeds a family of four can be made for under $4.00. It is so simple to make.

Ingredients:
Boil 2 quarts of water in a large pot
4 cloves of garlic chopped
1/4 cup of parsley chopped fine
Kosher salt and pepper to taste
3 tablespoons of extra virgin olive oil
7 eggs scrambled
One scallion diced (optional)
Parmesan cheese (optional)

Bring water to a boil and add pasta, garlic, parsley, salt and pepper. Cook pasta to desired tenderness then add scrambled egg and olive oil. Stir egg gently so it can stay in large chunks.

Serve hot and sprinkle scallions with parmesan cheese on top. If the pasta absorbs the liquid just add more water to make a soup consistency.

This meal can't get any easier, inexpensive and delicious.

Making the Pinewood Derby Race vehicle

We have a big race coming up on Saturday. It will be our first Pinewood Derby with the Boy Scouts. We purchase the Boy Scouts recommended car kit and it turned out to be a block of wood that has to be carved into a race car. Yes!!!! A block of wood! We were in Hobby Lobby over the weekend and they happen to stock all kinds of pre-carved Pinewood Derby cars and trucks. The Chief and the Cisco Kid decided to get one of the Trucks.   

The Chief and the Cisco Kid decided this truck is not going to be any ordinary truck; it's going to be a Fire Truck race vehicle. 


This is what they have so far.

They added two square pieces of wood to heighten the cab so they could attach fire hoses. 

That block of wood!!!! I thought I would try carving a hammer head shark race car out of it and have a little family rivalry between cars.  Not going so well!!!  I think this just might have to wait until next year's race.
