My new favorite place to eat.

Over the weekend we stopped into Chipotle Mexican restaurant. I didn't realize it was more of a fast food place. The menu is on the wall and you can watch them make it right in front of you. I have heard that their meats are grown in a humane environment and they use all fresh ingredients. The food was so good... I am hooked. I ordered the Chicken burrito bowl and the Chief ordered the Steak burrito. I'm going to say it again. The food was so good. You can tell that everything is fresh.

How I tell it.....is completed.

Last evening the Cub Scouts had a great visit at Publix. The staff was so accomidating and jenerious. When we got there Mr. Keoni gave all the boys a gift that included a balloon, name tag pin, an I love Publix pin, Publix wheel crayon and a mesh hat.  
Our 1st stop was to the bakery.  Ann was so nice to tell the boys all about how they bake bread and make cakes.  She had all the boys touch the dough. 
Then she came out with a very large tray of cookies.
This is a funny story about the cookies. Publix is known for giving free cookies to the kids. When the boys heard they were going to Publix, they all asked if they can get a cookie. I told them if they listened and behaved themselves, they would get a cookie at the end. I mentioned earlier the bakery was our first stop. After Ann's presentation she pulled out a very large tray of cookies and told the boys to take one. All the boys told her they were not allowed to get one until the end. That totally floored me. They are all so well mannered. I am so proud of all my little guys.   
Of course they loved the cookies.  Happiness is a Publix cookie!!!
Now it was time to go in the back room. They were given their mesh hats.
This is where he demonstrated recycling boxes and how they were crushed using the machine. 
They were able to see inside one of the gigantic walk in freezers. 
He had all the boys ring up some items and he gave them the receipt. 
This was a very cool go see it.

The obsessed little boy

The Cisco Kid loves to collect coins. A few months ago we finished the State Quarters book. He loved working on that so much that I thought I would get him a coin collecting book for Christmas. He loves the hunt and the thrill of finding a matching coin. He loves this book so much that he has remembered certain coins that he needs and constantly searches for them. I love this book because of the education behind it. It teaches so much about the United States in fun ways. The great part is the Cisco Kid doesn't realize he is learning about not only coins but about the United States. </>
When he got his book he immediately wanted to fill it with coins. The Chief got his stash and dumped it out so the Cisco Kid could do some searching. Grandma and Cisco Kid sat there for hours looking and finding coins.
These are some of the pages in the book. It is a total of 14 pages.  Sorry for the white spot on some of the pages.  It's the flashes reflection. </>
The only Coin the Cisco Kid has on these two pages is the Wheat Ear. The great thing about this book is some pages have the actual picture of the coin needed. It really gives a great sense of interest for kids when they can see an actual picture of what they need. 
The Cisco Kid found the full Western Journey Nickel Series.  I cannot tell you how excited he was to find the full set.

Getting ready for The Cisco Kids Birthday Party.

I sent out all his Birthday Invitations. I did something different this year. I had them printed at Walgreens. The Cisco Kid is having his Birthday at Jungle Quest. I put some pictures on the invitations of The Cisco Kid having fun on the zip lines.   This invitation is great because of a large area I could put all the party information on. 

 Every year I make or alter a cake to fit his birthday theme. This year I am going to try to have a cake with a jungle theme and have a cut out of the Cisco Kid zip lining across the cake. I will post pictures when it is completed.

Chicken Waldorf Salad on a Croissant


A great winter or summer sandwich. This sandwich is a good change from a winter long soup and sandwich meals. This Chicken Waldorf Salad is so perfect alone or served on top of a nice buttery croissant. 

 
2 cups of baked and diced chicken. Approximately two breasts
1 large red apple diced in small bite size pieces
1/2 cup of diced carrots
1/2 cup of chopped walnuts
1 tablespoon of brown sugar Splenda
1/2 cup of Hellman mayonaise
Salt and pepper to taste
Add all the above ingredients into al large bowl and mix well.
lettice
1 tomato sliced
2 large croissants
Cut the Croissant in half and pile the Chicken Waldorf Salad on top. Garnish with lettice and tomato.
