Hot Corn Dip with home made Torillas

This hot corn dip is more than just a dip, it could also be a side dish or you could do like I do and eat it as your main meal. I make full of flavor , home made seasoned crispy totilla chips to serve with the dip.
1/2 cup of chopped onion
1/2 cup chopped green bell pepper
1/2 cup of chopped cilantro
2 tablespoons Mrs. Dash Southwest Chipotle seasoning
2 cans of 11 oz. sweet yellow corn, water drained
1 can of sweet cream corn
1 can of diced tomatoes and green chilies, drained and diced smaller
2-1/2 cup shredded Mexican style four cheese
1/8 cup of olive oil
 
Mix all ingredients together except for 1/2 cup of shredded cheese and olive oil. 
In a 5x7 baking dish add enough olive oil to coat the bottom of the baking dish.  Add the dip mixture and put the remaining cheese on top.  Bake on 350 degrees for 30 minutes. 
I like a less chucky tomato in my dip so I chopped them up.  

Home made Seasoned Crispy Tortilla Chips

1/4 cup Olive oil and 1 tablespoon of Mrs. Dash Southwest Chipotle seasoning mixed together
1 package of Carb Balance Medium soft flower tortillas cut into 8th's.

Brush each side of the tortilla slices with the olive oil mixture. Salt to tast.
Bake at 350 until golden brown.
