Roasted Potatoes

Roasted Red and Sweet Potatoes with Caramelized Onions
Roasted potatoes come out so sweet and delicious. It makes a perfect side dish with any meal.

3 large sweet potatoes
6 med red potatoes
1 Vidalia onion
1/2 cup parsley
1/4 cup olive oil
Salt and pepper to taste

Cut potatoes into 2 inch squares. Cut onion into slices. Toss all ingredients together. Place on a lined cookie sheet and bake for one hour at 350 degrees.


My family likes them best with Meatloaf.

When the boys are happy the Den Mom is happy

Last week I posted about the Cub Scout Doodle. They really enjoyed painting and putting it together. This Doodle is a good way to teach the boys how to be organized and for them to keep track of all the badges and belt loops they will receive. I made some mock badges and as we complete a requirement the boys will get the mock badge. They will place the mock badge on their name tag until they actually receive the real thing at the Pack Meeting. I displayed all the mock badges on the Doodle pole. Last Thursday we completed the Art Belt Loop requirement and all the boys received a mock painter’s pallet to put on their name tag. You would have thought it was Christmas they were so happy. The boys loved it so much, they all wanted to know what they were going to work on next and what mock badge they were going to get.

Just one more!!!!

Children will always give you the unexpected. These adolescent years are really something we never want to forget. Children, what they say and do are profound, hilarious, shocking and downright cute. It's another Wednesday of "What would your children say?"

HOW DO YOU KNOW YOU ARE TAKING TO MANY PICTURES OF YOUR CHILDREN.

I have been taking so many pictures of The Cisco Kid. One afternoon we were outside, I was doing some gardening and The Cisco Kid was playing. We got very hot and I decided we needed to go inside. I asked the Cisco kid if he would like one of my delicious frozen fruit slushies to cool him down. He immediately said YES!!! Then, he immediately said NO!!! I then told him I was going to make one for myself. He then asked, Mom are you going to take pictures? I answered, no baby. He then asked, Do you promise? I replied, I promise. He then said, OK!! I’ll have one then.

Yup!!!! To many pictures. He was ready to give up that sluchy he loves so much.

Halloween Costume

For the past two years The Cisco Kid has been a fireman for Halloween. This year he is going to do something totally different. He likes to pretend he is a scientist and he makes his science projects with different kinds of liquid. He also likes to look at bugs under his microscope. Since he already thinks he is a Scientist. I think it is fitting for him to be a Mad Scientist for Halloween.

Last week I posted all the pieces of the costume. This is the ending result of what we came up with. I had to make the Steampuck Goggles.

Oat-rageous Chocolate Chip Peanut butter Cookies

My Family flips over these cookies. This is another one of my Christmas cookies.
The dough can be made two weeks in advance and frozen. When you are ready to bake some cookies, remove the loaf from the freezer, slice the desired amount of cookies and defrost on a baking sheet for 30 minutes and bake. 1/2 cup butter softened
1/2 cup creamy peanut butter
1/2 cup sugar
1/3 cup packed brown sugar
1 egg
1/2 tea. vanilla extract
1 cup all purpose flour
1/2 cup quick-cooking Quaker Oats
1 tea. baking soda
1/4 tea. salt
1 cup semisweet chocolate chips

Cream butter, peanut butter and sugar; beat in egg and vanilla. Combine flour, oats, baking soda and salt. Add to the creamed mixture and mix well. stir in chocolate chips. Roll dough in plastic, wrap into a 2-1/2 inch log and refrigerate for 1 hour. Once log is stiff slice 1/2 inch thick and place on baking sheet 1 inch apart.

Bake for 10 to 12 minutes at 350 degrees. Makes 2 dozen.




I transferred into a much larger bowl so I could combine the dry ingredients.

Add chocolat chips.

Roll in plastic wrap and refrigerate for 1 hour.

Work it into a 2-1/2 inch log.





Remove dough from plastic wrap, slice 1/2 inch thick, place on a cookie sheet and bake.
