Grilled pork tenderloin with grilled pineapple.

Last night I grilled pork tenderloin and slices of pineapple, marinated in apple butter and orange juice.  The apple butter added a nice sweet flavor to the pork and a sweet spiced flavor to the pineapple.    
I purchased a large pork tenderloin and cut it into three 2 person servings. I sliced the pork tenderloin into one inch thick slices. I also sliced the pineapple into one-inch thick slices and grilled two slices which was enough for the Chief and I.  
Serves 2
Pork Tenderloin sliced into three one-inch thick slices.
2 slices of pineapple one inch thick
1/2 cup of orange juice
1/2 cup of spiced apple butter
1/2 teaspoon of cinnamon
1/2 teaspoon of cloves

Mix orange juice, apple butter, cinnamon and cloves together and pour 1/2 over the pork and the other 1/2 over the pineapple. Marinade in the refrigerator for 3 hours.

Grill the pork and the pineapple on medium for 25 minutes. Approximately twelve minutes on each side. This may vary depending on the heat of your grill.

Pork tenderloin is a very lean meat and it has a tendency to get very dry when grilled. The Apple Butter marinade keeps the pork moist.
I'm glad the weather is nice again because we could grill out every day.
